Things I Love Thursday – For the Love of Feta

This Thursday I’m loving the Athenos Garlic and Herb Feta Cheese

Confession: I am just not a salad lover. I want to enjoy salad because they’re “healthy” but the way I like it is not usually healthy at all. I like it with a lot of stuff in it which is usually not the healthy toppings and I typically like non-healthy dressings. Our favorite local restaurant has a house dressing that is feta buttermilk and IT IS TO DIE FOR…seriously, I would eat salad everyday with that dressing, although once again, that’s not healthy and defeats the purpose of having a salad. If I’m going to eat a salad with that many calories I might as well have fried chicken tenders and fries!

I just recently realized that I must not have ever eaten much feta cheese in my life and apparently didn’t know what I was missing. I started ordering salads when I was on my Advocare 24-day challenge and realized the salads with good toppings and feta cheese, I could eat without dressing at all. I bought the Athenos feta cheese at the store and “for the love of feta” – I have actually eaten an entire bag of spinach without it going bad! It’s a miracle! I honestly have been loving my made-at-home salads which is huge change! I’ve been switching it up with whatever I have at the house.

Here is some of my salad creations that I’m LOVING! They’re quick and easy to make for lunch and healthy-ish (better than some of the alternatives) which is exactly what I need! Plus I can change up the toppings to keep me from getting bored with it.

The dressings I have been using sparingly are Marzetti Roasted Garlic Italian (amazing) and Marzetti Simply Dressed Vinaigrette & Light – Light Roasted Tomato
