24-Day Challenge Friendly – Stuffed Pepper Casserole
I’m always looking for new recipes that are healthy, easy and delicious. During my first challenge my friend was telling me about a recipe she had found on pinterest that was really easy and good. She shared the recipe and I tweaked it to make it Advocare 24-day challenge friendly. It is one of my favorites and almost all of the challengers have enjoyed it! It makes about 8 servings so I usually eat leftovers and freeze some for another week when I’m ready for it again! I hope you enjoy it as much as I do!
Stuffed Pepper Casserole
Ingredients:
1 lb ground turkey
1-2 small bell peppers
½ Vidalia Onion
1 tsp garlic powder
3 garlic cloves minced
2 Cups long grain brown rice, cooked
½ jar of low sugar/organic spaghetti sauce
Preheat to 350.
Cook meat in frying pan until almost completely browned (I added the garlic powder while I was cooking the turkey). Chop up peppers, onion, and garlic and add in the skillet. Cook over medium-low heat until beef is completely cooked and the peppers and onions begin to tender. In a casserole dish, stir together the rice, spaghetti sauce and beef mixture and stir until combined. Bake for 25 minutes or until heated through.
(This recipe was originally made with ground beef and included cheese and salt that I left out. It’s great like this and is even better left over)
